This weeks my recipe of the week is a recipe from Gino D’acampo’s Pronto! Let’s cook in 20 minutes cookbook. It was Pork Medallions in Marsala and Mushroom Sauce!
What an amazing recipe. It was so tasty but of course I did my own take on it! I added into the sauce, sweet corn and courgettes because I’m a poor student I only had a pork lion steak which I cut into cubes.
It really doesn’t matter what type of pork you put with it, it is the sauce that makes this dish amazing. It is a great blend of flavours that brings a beautiful smell to your kitchen which brings people in to eat!
It was the first time I have tried Marsala wine: it is lovely gives a great flavour and taste to the sauce. It is very much like sherry but sweeter. I grew up always having a bottle of Manzanilla sherry in the fridge because my mum loves it but I found it too dry. So those who don’t like Manzanilla should try Marsala wine!!
Overall a great easy recipe to do, full of flavours and great for leftovers with something other than the amazing potato recipe included in the recipe!! Loving Gino’s 20mins meals. He is a fabulous cook that knows his food!!
